but the bagel didn’t start here. Its journey to becoming an American breakfast icon is a story of immigration, community, and craftsmanship: the same story in many ways, that built this country and established the American dream.
From Eastern Europe to Ellis Island
The first bagels arrived in America in the late 1800s with Jewish immigrants from Eastern Europe. In places like Poland and Austria where bagels were a simple, humble food. Sold from street carts, made fresh daily, and beloved for their chewy texture.
When families crossed the Atlantic in search of opportunity, they brought their recipes, their traditions, and their bagels. New York City became the heart of American bagel culture because it was the first stop for so many arriving immigrants.

By the early 1900s, New York’s Lower East Side was bursting with bakeries, each fiercely loyal to its own methods. Bagels were hand rolled, kettle boiled, and baked. The same process true craftsmen use today.
The Bagel Bakers Local 338 (bagel bakers had their own union) protected the craft and guaranteed quality. These bagels weren’t mass produced. They were made with pride, care, and a connection to home. New Yorkers fell in love, from delis to diners bagels spread through the city like wildfire.

After World War II, the bagel’s popularity exploded beyond New York. Returning soldiers brought stories of the foods they’d tried in big coastal cities. More people traveled, more cultures mingled, and America became curious about regional traditions.
In the 1960s and 70s, bagels hit grocery stores nationwide. Bagel sandwiches, cream cheese spreads, and breakfast platters turned this once immigrant bread into a mainstream staple.
America didn’t just welcome the bagel, it adopted it.
